Lets ssh acting as an SOCKS server (ssh -D port) for you. Then set your thunderbird to use SOCKS proxy. That's all what you need to do
uhmmm... perhaps putting a HOSTS file entry to point pop.gmail.com to 127.0.0.1 (localhost)? so while you dont have to change the settings of thundercat/bird everytime you go in and out of your client's office, you just have to comment/uncomment that hosts file entry.
Perhaps add the cert permanently so it won't bug you no more. If there is a way to trick then I would like to know ... useful when you are generating "fake" certs on purpose

There is a Thunderbird and Firefox add-on that will fix this, it's available via this link:
